- 100 g almond flour (or finely ground almonds)
- 40 g unsweetened shredded coconut (plus extra for rolling, optional)
- 10 g matcha powder (about 2 tablespoons)
- 85 g honey or maple syrup (about ¼ cup)
- 30 g Zejd Extra Virgin Olive Oil (about 2 tablespoons)
- 5 g vanilla extract (about 1 teaspoon)
- 1 small pinch of salt
- 15–30 g water (1–2 tablespoons), only if needed
- In a bowl, mix the almond flour, shredded coconut, matcha powder, and salt.
- In another bowl, whisk together the honey (or maple syrup), Zejd EVOO, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until combined.
- If needed, add a little water to help the dough come together.
- Roll into small balls (around 20 g each).
- Optional: Roll the balls in extra shredded coconut.
- Chill in the fridge for 20–30 minutes to set.
