INGREDIENTS
  • 100 g almond flour (or finely ground almonds)
  • 40 g unsweetened shredded coconut (plus extra for rolling, optional)
  • 10 g matcha powder (about 2 tablespoons)
  • 85 g honey or maple syrup (about ¼ cup)
  • 30 g Zejd Extra Virgin Olive Oil (about 2 tablespoons)
  • 5 g vanilla extract (about 1 teaspoon)
  • 1 small pinch of salt
  • 15–30 g water (1–2 tablespoons), only if needed
INSTRUCTIONS
  1. In a bowl, mix the almond flour, shredded coconut, matcha powder, and salt.
  2. In another bowl, whisk together the honey (or maple syrup), Zejd EVOO, and vanilla extract.
  3. Pour the wet mixture into the dry ingredients and stir until combined.
  4. If needed, add a little water to help the dough come together.
  5. Roll into small balls (around 20 g each).
  6. Optional: Roll the balls in extra shredded coconut.
  7. Chill in the fridge for 20–30 minutes to set.
