INGREDIENTS
  • 500g of fresh okra washed and cleaned
  • 1 big yellow onion
  • 5 garlic cloves crushed
  • 1 tablespoon of fresh chopped coriander (optional)
  • 10 cloves garlic whole
  • 2 large ripe tomatoes diced
  • 1/2 cup of extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper
INSTRUCTIONS
  1. Heat the olive oil in a saucepan and fry the okra.
  2. Remove from fire once the okra slightly change color.
  3. In the same saucepan fry the onion until it becomes
  4. Add the garlic with coriander as well as the whole cloves of garlic, and continue frying for 5 min.
  5. Pour in the diced tomatoes and cook for 20 minutes, add a little water so that the cloves of garlic become tender.
  6. Season with salt and pepper.
  7. Add in the cooked okras in the tomato sauce and bring the mixtureto a boil
  8. Reduce the heat and simmer for another 15 minutes
  9. Remove from fire and let cool
  10. When cooled, pour in the the lemon juice and stir gently and put in a serving dish.
