INGREDIENTS
  • 1 1/2 pounds sweet potatoes
  • 1/3 cup extra virgin olive oil
  • Salt
INSTRUCTIONS
  1. Preheat oven to 250 degrees
  2.  Rinse and dry your sweet potatoes and slice them as thin as possible.
  3. Toss slices in a touch of olive oil to lightly coat, then sprinkle with salt. Lay out in a single layer on a baking sheet and bake for about 20-25 minutes until crisp and golden around the edges.
  4.  Remove from the oven and let them rest for 10 minutes to crisp up. Serve immediately.
