INGREDIENTS
  • ¾ cup all-purpose flour
  • ½ tsp salt
  • ¼ tsp baking soda
  • 2 large eggs
  • ¾ cup light brown sugar
  • ¾ cup Zejd Extra Virgin olive oil
  • 2 tbsp water
  • 1 tsp vanilla extract
  • 1 1/2 cups semi-sweet chocolate
  • 9 fresh strawberries
  • 9 mini marshmallows
  • 1 banana
INSTRUCTIONS
  1. Preheat oven to 180 degrees Celsius.
  2. Line an 8x8 baking pan with parchment paper and set aside.
  3. In a medium bowl, combine the flour, salt, and baking soda and set aside.
  4. In a large bowl, whisk together the eggs, extra virgin olive oil, brown sugar, water, and vanilla.
  5. Sprinkle the dry mix over the wet mix and stir until fully incorporated.
  6. Melt 1 chocolate cup and whisk melted chocolate into the brownie batter until fully combined. Mix in the remaining 1/2 cup of chocolate chips.
  7. Pour batter into baking pan. Bake for 50-55 minutes.
  8. Remove from oven and transfer to a baking rack to cool.
  9. After completely cold, cut the brownie cake into 9 pieces
  10. Cut the banana into 1/2 inch (1-1.5cm) thick slices. Slice off the strawberry stems.
  11. Top each brownie piece with a banana slice and a strawberry; then add a mini marshmallow on the point of the strawberry to complete the hat.
  12. Set in a serving plate.
