INGREDIENTS
• 2 cups all-purpose flour
• 2 teaspoons sugar
• 1 teaspoon vanilla
• 1 tablespoon baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1 1/2 cups milk of choice
• 2 eggs
• 4 tablespoons extra virgin olive oil
• Maple syrup or honey
• sliced bananas
• whole walnuts
INSTRUCTIONS
1. Mix all dry ingredients in a large bowl.
2. Whisk together lightly beaten eggs, milk, extra virgin olive oil, and vanilla in a separate wide bowl until incorporated.
3. Add the wet ingredients to the dry ingredients and mix until just combined.
4. Heat a pan over medium-high heat until a few sprinkles of water dropped on the pan splatter. Then grease the pan with some oil.
5. For each pancake pour 1/4 cup of batter onto the hot pan. Cook 1 to 2 minutes on each side, or until puffed on top, cooked through, dry around edges and golden brown on both sides..
6. Serve the pancakes topped with maple syrup or honey, sliced bananas and walnuts.
