INGREDIENTS
  •  3 ripe peaches, thinly sliced
  •  ½ cup granulated sugar
  •  a couple drops of lemon juice (optional)
  •  7 ½ cups water, divided
  •  1 ½ tablespoons Zejd olive leaf infusion
  •  fresh mint leaves for garnish
  • Ice cubes
INSTRUCTIONS
  1.  In a medium saucepan, add peaches, sugar and water and bring to a boil over high heat. Put the heat down to low and simmer for 10-15 minutes. Feel free to add in a few drops of lemon juice to brighten the aroma! Use a wooden spoon to stir and crush the peaches to infuse the flavor. Once the sugar is dissolved, cover, remove from heat and let steep for 25-30 minutes.
  2.  Pour the peach syrup into a bottle or container over a fine mesh strainer to strain out peaches and refrigerate to chill.
  3.  In the meantime, boil the water and brew Zejd olive leaf for 3 – 5 minutes. Let the tea cool, then refrigerate until cold.
  4.  Combine the chilled peach syrup and brewed olive leaf tea in a pitcher and pour over glasses of ice. Garnish with mint leaves and ice cubes before serving.
