Roll up the croissants from the bottom, ensuring the seam is faced downward. To achieve a crescent shape, gently bend in the edges. 4. In a small bowl, beat the egg yolk and milk using a fork. Brush the olive jam pastries with this egg mixture. 5. Bake in the preheated oven for approximately 17-20 minutes or until golden.
