INGREDIENTS
  • 1 cup fine semolina
  • 2 cups all-purpose or cake flour
  • 1 tablespoon turmeric
  • 1 ½ teaspoons baking powder
  • 1 cup extra virgin olive oil
  • 1½ cup milk
  • 1 cup sugar
  • 1-2 tablespoons tahini or oil
  • Handful of pine nuts
INSTRUCTIONS
  1. Preheat the oven to 180ºC. Grease a 9×9" baking pan with the tahini or oil.
  2. Mix the dry ingredients (semolina, flour, turmeric and baking powder) together in a large bowl.
  3. Mix the extra virgin olive oil and milk in another small bowl. Stir in sugar until dissolved.
  4. Combine both mixtures and whisk to obtain a nice smooth yellow batter.
  5. Pour the batter in the greased pan and sprinkle the pine nuts as a topping.
  6. Bake in the oven for 40-45 minutes until the top is lightly browned. Remove from the oven once a toothpick inserted in the center comes out clean.
  7. Set to rest at room temperature before serving.
