INGREDIENTS
  • 6 boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup lemon juice plus the lemon zest
  • 1/4 cup of pitted olives
  • 2 teaspoons rosemary
  • 4 garlic cloves pressed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • lemon wedges for serving
INSTRUCTIONS
  1.  Pat chicken dry and pound chicken if some parts are too thick.
  2. Combine the olive oil, lemon juice, rosemary, garlic, salt and pepper in a zip-lock plastic bag.
  3.  Add chicken and toss well to combine. Seal the bag and place in the refrigerator to marinate for at least 30 minutes.
  4.  Preheat grill or grill pan to medium high heat. Place chicken on the grill for 5-7 minutes. Cook until juices run dry, approximately 5-7 more minutes.
  5.  Remove chicken from the grill. Transfer to a platter and serve with lemon wedges and olives, as desired.
