INGREDIENTS
  • 1 small seedless watermelon (3 pounds or 1.3 kg), rind removed, cut into 1-inch chunks and chilled
  • 1/4 (60ml) cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1/4 cup chopped fresh mint leaves
  • 4 ounces (110g) crumbled feta cheese
  • 1/2 teaspoon salt
  • Small pinch of freshly ground black pepper
INSTRUCTIONS
  1. Place watermelon chunks in a large bowl. Add the oil, lemon juice and mint, and toss until watermelon is evenly dressed. Season lightly to taste with salt and pepper.
  2. Transfer salad to a wide bowl or a large plate. Sprinkle the crumbled feta cheese on top and drizzle with more olive oil. Serve immediately.
