  • 8 oz (about 225g) block of feta cheese, cut into cubes or chunks
  • 1/2 cup garlic infused olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon crushed red pepper flakes (optional, for some heat)
  • Zest of 1 lemon
  • Freshly ground black pepper, to taste
  • Fresh herbs (such as rosemary or basil) for garnish (optional)
INSTRUCTIONS
  1. Cut the feta into cubes or chunks as desired.
  2. In a bowl, combine the garlic-infused olive oil, dried oregano, dried thyme, crushed red pepper flakes (if using), and lemon zest. Mix well.
  3. Place the feta cubes in a glass container with a lid. Pour the garlic and herb-infused olive oil mixture over the feta.
  4. Gently toss the feta in the oil mixture, ensuring each piece is well coated. Seal the container and let it marinate in the refrigerator for at least 2-4 hours, or preferably overnight. Allow the feta to absorb the flavors.
  5. Before serving, bring the marinated feta to room temperature. Sprinkle freshly ground black pepper on top and garnish with fresh herbs if desired.
  6. Serve the marinated feta on a platter with crackers, bread, or as part of a cheese board. It's also a great addition to salads or alongside Mediterranean dishes.
